Today we will make a delicious Soy bean casserole which is full of protein for those days when you would like a meatless meal for a change.
Soak 225grms soya beans for a few hours or overnight,then drain. Place into a saucepan with a litre of water and simmer until soft. Drain in a colander over a basin to save the juice.
Place the beans into a casserole dish with a lid.
Add 2 medium carrots, sliced or diced, 1 medium onion, chopped, 1 tablespoon of honey,50grms sunflower seeds, 2 tablespoons of chopped parsley. 2 tablespoons of soy or worcestershire sauce and salt and pepper to taste, add 225mls of the juice.
Place into a hot oven 375F-(190 C) for 50minutes with the lid on.
Remove the lid and sprinkle with slivered almonds and place uncovered back into the oven for another 15minutes.
Now for a delectable whole orange cake. This cake will serve 12 generous slices and is lovely for everyday or a special occasion.
Put 2 whole oranges into a saucepan and cover with cold water,bring to the boil and then drain. Cover with more cold water and bring to the boil again,then drain and cool. Chop into chunks and remove any seeds.
place into a blender and puree.
Add 125grms melted butter,1cup milk,3 eggs lightly beaten,1 and 1/2cups of Self raising flour,sifted,1 cup of castor sugar and 1/2 cup of almond meal (ground almonds)Stir everything together. Place into a greased cake tin and bake in a moderate oven for approximately 50 minutes, or cooked when tested with a skewer and it comes out clean. Cool in the tin then turn out onto a wire rack to cool completely. Ice with orange icing and decorate with orange zest.
