What I did with the fresh organic veggies from the garden I picked on Sunday

Easy frittata

Boil a few new potatoes in salted water until only just done

Meanwhile stirfry greens in a little butter

 Grate some pecorino or similar tasty cheese

Slice the drained potatoes and put them in one layer into the frypan, layer the veggies over the potatoes. 
 Slice some roasted,peeled red capsicum and place on top, then sprinkle the cheese over the top.
Beat 4 eggs and a little single cream together and add Salt and Pepper to taste.
Pour this mixture over the veggies and cook over a low flame until the egg is set a little on the bottom. 
 Place under the grill until golden and set.  Take care not to burn the frypan handle.
