Low fat yummy dinner



 Salad is an almost daily part of our diet,so today I'll share one of our regular low fat meals with you






 I like to mix up a variety of colours to make it appetising.  I use whatever veg is in season,and at the moment everything is plentiful with the rains and sunshine we have had.  I didn't grow all of this, but shop in the farmers markets whenever I have time.  Tonight I used my pink transfer ware plates.






 We teamed the crunchy,yummy salad with vegetable frittata.  To make,boil some whole potatoes in their jackets until still quite firm.   When cool, peel and slice.  Meanwhile peel some sweet potato and cook the same way.


Lay the potatoes in a fry pan which you have sprayed with oil.  On a low flame let them fry a little keeping an eye on them while you put some red capsicum,small baby,yellow squash and a peeled onion into the same water you used for the potatoes. Simmer a few minutes. Drain and slice these and add to the potatoes. 


 You can really use whatever you have for this,I sometimes add green beans,but as we have so many growing at the moment, tonight we are having a break from them.




 Beat 4 eggs with Salt and Pepper and a good dollop of low fat yoghurt. Pour this over the veggies.





Crumble some Low fat fetta cheese,cottage cheese and finish with a sprinkle of grated cheddar.
Let the whole thing fry a little until the egg is a little set on the bottom,loosening around the edge a little,while watching carefully.
Place under a hot grill taking care not to burn the fry pan handle.
Remove when set and golden.
