Flowers to plant for Spring & tea with lemon cake

We made a trip to Bunnings today for some lovely Spring flowers
I so love pansies and daffodils

A lovely much awaited parcel arrived today also.
I ordered two climbing roses from Treloars in Melbourne
I couldn't get the ones I wanted here in Adelaide

I have to soak them in water for 24 hours before planting

I read on Pinterest that banana skins are so good for planting
under the roses. They are supposed to love them,so I've been saving
them up in the freezer.

Afternoon tea time
Strawberries with a sprinkle of icing sugar(confectioners sugar)

and Lemon almond cake with a refreshing cup of Dilmar tea

Recipe for Lemon Almond cake

Ingredients
185gms(6oz)butter softened
1/2cup caster sugar(ordinary white sugar but finer)
1/2cup curd(butter) or I used juice of 1 lemon instead
as I didn't have lemon curd on hand and it worked perfectly well
3 eggs beaten
11/4 cups Self Raising flour sifted
30grms(1oz) ground almonds
1/2 cup milk
3 tblspns flaked almonds for decoration
(can be toasted)

I just iced the cake with a simple icing
made with icing sugar and a little water
but the recipe says to use the one below

Lemon Frosting
125 grms(4 oz cream cheese
1 T finely grated lemon rind
11/2 cups icing sugar(confectioners sugar)
2  Tspns lemon juice

Method
Place butter, sugar, lemon butter(curd) or lemon juice of 1 lemon
eggs, flour, ground almonds and milk in a large bowl and mix well

Spoon batter into a greased and lined 20cm(8 inch round cake pan
and bake 40mins or until cooked when tested with a skewer that comes out clean

Stand in the tin for 5 mins before turning out onto a cake rack to cool

To make frosting place cream cheese, lemon rind, icing sugar and lemon juice in
a food processor and process for 1 min or until frostiing is of and easy spreading
consistency
Spread over cake and decorate with almonds

Enjoy

Hope you are enjoying your week,I certainly am. It's nice to get out into the garden again

Hello Janette....
oooooo, your cake looked yum! Is castor sugar regular white sugar or confectioner's. I'd like to try that.

And Janette, I never knew that banana peels were good for roses. I'm going to try that.

Hope you have a nice weekend!Susan

Those flowers look so pretty! It is so hot here a lot is dying--but my roses and petunias are still looking beautiful. Those strawberries look so pretty they don't even look real!

hello

Fabulous photos of spring flowers! Love the tea time with the sugared strawberries and the delicious cake. Your tea is very sweet and I hope you have many large blossoms this spring. Please, share more flower photos as they develop!
