Country Pear and Almond Cake


I thought I might give you another nice recipe to try,
I hope you enjoyed the lemon and almond cake
from last week.
This one makes a lovely desert served with cream,yoghurt or ice cream

I'm going to try this on my next lunch party with friends.



Country Pear and Almond Cake

Oven temp 180c

2 eggs beaten together with 200grms Caster sugar (white granulated will do)
Caster sugar is similar but finer
4 Tblspns milk folded in alternately with 200grms  Self Raising flour

Grease and line a round cake pan
Sprinkle bottom with 30grms dried breadcrumbs

Pour half the batter into the tin
peel and slice 2 pears and put on top of the mixture in the tin
Pour on the other half of the batter

Dot with 30grms butter and sprinkle with 60grms flaked almonds
Bake for 30-40mins or until set and cooked 

Allow to cool 10 mins in the tin before inverting onto a plate then back the right way onto another plate then slide onto a cooling rack
Delicious warm with yoghurt.



While in the kitchen I always fill the oven to save gas,so my 
usual crispy shortbread biscuits go in the oven at the same time



Then a batch of scones while the bread dough is rising in the warm
kitchen


and to use up a bit of left over sweet shortcrust pastry I had in the 
freezer from last baking day,I used up one last apple in the fruit bowl
which I peeled,cored while still whole,stuffed the hole with mixed
dried fruit and soft brown sugar dotting a little fresh butter
over the apple
sit it on top of the circle of pastry, brush with beaten egg
and fold up the pastry to encase the apple
brush all over with the beaten egg and sprinkle with caster sugar
Bake in the oven at the same time as the scones
Delicious served with custard
It is plenty for 2 people



What to do with the left over egg (I hardly ever waste food)
I stirred it into a bubbling pot of veg and lentil soup


Sour Bread dough ready to be kneaded




I don't worry about the kitchen getting messy when I'm enjoying
myself cooking. There usually is stuff everywhere,even bits on the floor.



Time to clean up and have a nice cup of tea
I think I'll use the pink roses china set today and 
enjoy a nice scone with fresh butter

Good Evening Jeanetteann, I love the sound of Lemon Almond cake. It sounds as if it is really moist with the addition of the pears.... I am going to write out this recipe to try, as my mother is coming to visit us for two weeks and I know she will really enjoy this recipe.
I am exactly the same when I am baking, sometimes my kitchen looks like a bomb has hit it, but as you say, once the baking and cooking is finished it doesn't take five minutes to clean up....well maybe it is more like fifteen to twenty minutes.

Oh my everything and I mean everything looks so good. The pear and almond cake looks so fabulous and I bet it is sooo good. WOW!!! You really cooked up a lot of beautiful things. I like to cook but I hate the mess however, like you a nice cup of tea afterwards is the best!!! Hgus, Beverly

Wow...everything looks so delicious, and you are so efficient! I have so little counter space that I am always frustrated when I cook or bake. Someday I plan to either build a narrow island, or gut and redo our whole kitchen. Then maybe I'll enjoy spending time in the kitchen...or not lol!
